Here’s a tasty local pasta dish, that only takes a moment to prepare: |
Orecchiette con cime di rapa serves 4-6 persons 400g

Drop the pasta into a large pan of boiling salted water and cook as per packet instructions. After approx. 4 mins add the greens to the water. In the meantime, heat up 3 tablespoons of olive oil in a small pan and then add the anchovies - stir rapidly until the anchovies have melted into the oil taking care not to let them burn. Drain the pasta/greens and add the oil with the anchovies. Stir well and serve with lots of freshly grated parmesan cheese. A good red wine is great with this pasta dish - try a bottle of Primitivo di Manduria for the perfect supper! |
