2007 was a good year for Italian wine – and lots of it is now ready for drinking! Try the award-winning whites from the Argiolas Cantina in northern Sardinia, or the region’s robust reds, many featuring the local Canonau grape. In Tuscany look out for top-end Brunello like Podere Salicutti, or for everyday drinking Boschi Salvati from San Luciano always goes down a treat.

It may still be chilly here, but Spring has well and truly arrived in Italy. Just check out the new fashions in the shops, the café tables out on the pavement and the sudden surge in ice-cream sales. Here’s a tasty local pasta dish, that only takes a moment to prepare:

Orecchiette con cime di rapa

serves 4-6 persons

400g orecchiette (ear shaped pasta)
400g cabbage tops or spring greens
2 cloves of garlic
2 or 3 anchovies
olive oil
salt

Drop the pasta into a large pan of boiling salted water and cook as per packet instructions.

After approx. 4 mins add the greens to the water.

In the meantime, heat up 3 tablespoons of olive oil in a small pan and then add the anchovies - stir rapidly until the anchovies have melted into the oil taking care not to let them burn.

Drain the pasta/greens and add the oil with the anchovies.

Stir well and serve with lots of freshly grated parmesan cheese.

A good red wine is great with this pasta dish - try a bottle of Primitivo di Manduria for the perfect supper!
