The splendid Eremo della Giubiliana sits amidst the stunning Iblean countryside surrounded by wonderful carob groves and typical dry stone walls, all gently sloping down towards the inviting blue sea.
The original building dates back to the 12th century when it was held in an ecclesiastical feud. It became a fortified baglio or fortress in between the 15th and 16th centuries , when the pirates had intensified their activity in the Mediterranean sea. Also, at the beginning of the 16th century, the Knights of the Order of St. John, on their way to the nearby isle of Malta, used the convent as a stopping place and their presence has been recently revealed and documented.
In the 18th century Eremo was bought by a local aristocratic family and some years ago the last heir decided, after long and attentive restoration works, to open the estate as a 5 star hotel. The core of the old Convent has been restored in keeping with the old structure paying great care to the original materials used, such as the old pitch stone, the limestone floorings and the antique furnishings. The rooms are found in what were once used as the monks cells - they have been furnished with typical Sicilian furniture and household goods and, contrary to the past, they have been equipped with all the modern day comforts!
Eremo della Giubiliana has a great selection of rooms, ranging from cosy classics to the more spacious superior rooms, with their local pitch stone flooring, wrought iron beds and antique furniture, often overlooking the beautiful garden with its Mediterranean vegetation and age old olive trees. The romantic deluxe rooms all have a terrace and the classy and elegant suites are all different in their decoration and furnishing but will all take you back in time!
The ancient refectory, which used to host the knights of the order of St. John, with its antique furnishings and high ceiling has been now converted into the elegant and refined restaurant Don Eusebio, where sophisticated meals accompanied by excellent wines may be enjoyed. But in the warm summer nights the restaurant moves to the Hortus Conclusus garden, a little paradise next to a lovely pool making it the ideal setting for your romantic dinner under the stars and also a unique place to relax and simply enjoy the peaceful and quiet surroundings during the gloriously warm and lazy summer days.
